vin-shu plus amber ~terra~ 2022
初めて仕込んだデラウェアで醸しの白になります。発酵からアンフォラで全房での3ヶ月のマセラシオンの後、搾汁。その後アンフォラにて約10ヶ月貯蔵。オリ引き時に貯蔵していたシャルドネを3/1ほどブレンドしています。先にリリースしたamberは夏らしいpopでトロピカルなニュアンスでしたが、こちらは熟成感あり、落ち着いた印象。パッションションフルーツに加えて、蜂蜜、黄桃、りんご、ジャスミン 、塩味とアフターにナッツやバター感の要素に伸びやかで軽快な酸と醸しによる厚みを感じます。秋から冬にかけての食卓に寄り添う雰囲気です。

・alc : 11%
・data : natural wild yeast / non filter / no acidification & chaptalization / Unsulfited
