マスカット・ベーリーAを全房で1ヶ月ほどのマセラシオン・カルボニック、解放後は日中は屋外に出して加西の太陽のエネルギーのエッセンスを浴びながら露天発酵。朝晩のピジャージュを行いました。発酵終盤にプレス後、約1年間アンフォラで熟成しています。瓶詰め間もないですが、今開けていただいても楽しめるかと思いますが数年熟成させても楽しいと思います。森の腐葉土やクロスグリ、プルーンなどの赤い果実にクローブ、シナモン、アニスなどのスパイス感。味わいは香りほどの果実味や甘やかさは控えめですが、素直な味わいで、トマトやザクロのような旨みが感じられます。和洋中etc…色々なお料理に合わせやすそうです。旨みがあって瑞々しい透明感 身体に浸透していく液質です。
